Acidity The tart, tangy or zesty sensations in wine. Ideally, acidity brightens the wine’s
flowers much like a squeeze of lemon on fish. Wines lacking acidity taste “flabby”.
Balance The harmony between acidity, tannin, alcohol and sweetness in a wine.
Body How heavy or thick a wine feels in the mouth.
Dry A wine without perceptible sweetness. Dry wines can have powerful fruit flavors;
they just don’t taste sweet.
Earthy An earthy wine evokes flowers like mushrooms, leather, damp straw or even
manure.
Fruity Wine with an abundance of fruit flavors.
Mineral Flavors that reflect the minerals found in the soil in which the grapes are
grown. Steely, flinty and chalky are also words used to describe these flavors.
Oaky Wines that transmit the flavors of the oak barrels in which they were aged.
Powerful Wine that is full of flavors, tannin and/or alcohol.
Rustic A bit rough and unsophisticated; often charming.
Tannin A component of grape skins, seeds, stems and oak barrels. Mostly found in red
wines, tannin gives a puckery sensation similar to that of over-steeped black tea.
